Ucchini Cookies with Cream Cheese Frosting





Melt-In-Your-Mouth – Soft & Delicious!


2 cups grated zucchini

3 cups all-purpose flour

1 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1 cup white sugar

1/2 cup unsalted butter, softened

1 egg

1 tsp vanilla extract

1 cup chopped walnuts (optional)

For the Cream Cheese Frosting:

1/4 cup unsalted butter, softened

4 oz cream cheese, softened

2 cups powdered sugar

1 tsp vanilla extract


Preheat oven to 350°F (175°C).

In a bowl, mix together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.

In a separate bowl, cream together sugar and butter. Beat in the egg and vanilla extract.

Stir in the grated zucchini. Gradually add the dry ingredients to the zucchini mixture. Fold in the walnuts if using.

Drop spoonfuls of dough onto a greased cookie sheet.

Bake for 10-12 minutes or until lightly golden.

For the frosting, beat together butter, cream cheese, powdered sugar, and vanilla extract until smooth.

Once cookies are cooled, spread the cream cheese frosting on top.
