Strawberry Bread

INGREDIENTS:

2 cups fresh strawberries, chopped

1 3/4 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1/4 teaspoon baking powder

1/2 cup unsalted butter, softened

1 cup sugar

2 large eggs

1/3 cup water

1 teaspoon vanilla extract

DIRECTIONS:

Preheat the oven to 350°F (175°C). Grease a 9×5 inch loaf pan.

In a small bowl, toss chopped strawberries with a little flour to coat.

In another bowl, mix together 1 3/4 cups flour, baking soda, salt, and baking powder.

In a large bowl, cream the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in water and vanilla extract.

Gradually add the flour mixture to the creamed mixture and stir just until combined. Fold in the floured strawberries.

Pour the batter into the prepared loaf pan and spread evenly.

Bake for 60-70 minutes, or until a toothpick inserted into the center of the bread comes out clean.

Allow to cool in the pan for 10 minutes, then remove to a wire rack to cool completely.
