Quick 7-Minute Frosting





1+1/2 cups sugar

1/3 cup cold water

2 egg whites

A pinch of salt

1 teaspoon vanilla extract

1/2 teaspoon cream of tartar


In a medium glass bowl, I combine sugar, cold water, cream of tartar, egg whites, and salt.

I create a simmering water bath on the stove. Using an electric mixer, I beat the egg mixture on low speed for 30 seconds.

I place the bowl on the double boiler, allowing it to heat on high until it becomes stiff and light, which may take up to seven minutes.

I remove the bowl from heat, add vanilla extract, and mix for an additional 2 minutes until well incorporated.

Since the frosting sets quickly, I use it immediately.


To frost a layer cake, I simply double the recipe. No need to make two separate batches; I just double the quantities and prepare it all at once.
