Peaches and Cream Cheesecake Bars





For the Bars:

1 can of peach pie filling (21 oz)

4 eggs

1 cup of softened unsalted butter

2 cups of sugar

3 cups of flour

1 teaspoon of salt

2 teaspoons of vanilla essence

For the Cheesecake Layer:

2 teaspoons of vanilla essence

8 ounces of cream cheese

1/2 cup of granulated sugar

1 egg


Preheat the oven to 350°F (175°C) and line a 9×13 baking dish with parchment paper.

Cream the butter and sugar together until light. Add the eggs and vanilla; beat well.

Mix the flour and salt, then blend into the wet ingredients.

Spread half of the batter into the prepared baking pan. Set aside.

In a separate bowl, whisk together the cream cheese, sugar, vanilla, and egg until smooth.

Spread the cheesecake mixture over the batter in the pan.

Top the cheesecake layer with peach pie filling.

Drop the remaining batter in dollops over the peach filling.

Bake for 30-35 minutes until golden. Allow it to cool completely.
