INGREDIENTS:

4 boneless, skinless chicken breasts

1/2 cup all-purpose flour

2 eggs, beaten

1 cup panko bread crumbs

1/2 cup grated parmesan cheese

1/4 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons olive oil

DIRECTIONS:

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Place the flour in a shallow dish. In a separate shallow dish, beat the eggs. In a third shallow dish, mix together the panko bread crumbs, parmesan cheese, salt, and pepper.

Dredge each chicken breast in the flour, then the egg, and then the panko mixture, making sure to coat all sides evenly.

Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 2-3 minutes on each side, or until they are golden brown.

Transfer the chicken to the prepared baking sheet and bake for 8-10 minutes, or until the internal temperature reaches 165°F (74°C).

Serve the parmesan crusted chicken hot, with your choice of sides. Enjoy!
