Overnight Caramel Pecan Rolls





For the Dough:

– 1 cup warm milk (110°F/45°C)

– 2 tablespoons active dry yeast

– 1/4 cup granulated sugar

– 1/2 cup unsalted butter, softened

– 2 large eggs

– 1 teaspoon salt

– 4 cups all-purpose flour

For the Filling:

– 1/2 cup unsalted butter, melted

– 1 cup brown sugar, packed

– 1 tablespoon ground cinnamon

– 1 cup chopped pecans

For the Caramel Glaze:

– 1/2 cup unsalted butter

– 1 cup brown sugar, packed

– 1/2 cup heavy cream

– 1 cup chopped pecans


  1. In a bowl, combine warm milk, active dry yeast, and a pinch of sugar. Let it sit for 5-10 minutes until the yeast is foamy.
  2. In a large mixing bowl, cream together softened butter and sugar. Add eggs, salt, and the yeast mixture. Gradually add flour, mixing until a soft dough forms.
  3. Knead the dough on a floured surface until smooth and elastic.
  4. Place the dough in a greased bowl, cover with plastic wrap, and refrigerate overnight.
  5. Roll out the chilled dough on a floured surface into a large rectangle.
  6. For the filling, spread melted butter over the dough, then sprinkle with brown sugar, ground cinnamon, and chopped pecans.
  7. Roll the dough tightly into a log and slice into rolls.
  8. For the caramel glaze, melt butter in a saucepan, add brown sugar, and stir until smooth. Stir in heavy cream and chopped pecans.
  9. Pour the caramel glaze into a greased baking dish.
  10. Place the sliced rolls in the dish, cover with a cloth, and let them rise for 1-2 hours.
  11. Preheat your oven to 350°F (175°C).
  12. Bake the rolls for 30-35 minutes or until golden brown.
  13. Allow the rolls to cool slightly before serving.
