Okra Patties

INGREDIENTS:

Vegetable Oil for frying

1 lb fresh okra chopped fine

1 cup onion chopped fine

2 tablespoon  garlic minced

3 teaspoons favorite season salt

2 teaspoons red pepper

1/2 teaspoon black pepper

1 cup water

2 Eggs

1 teaspoon baking powder

1 cup cornmeal

1/2 cup all-purpose flour

 

DIRECTIONS:

Pour oil into large skillet (should be at least an inch deep) and heat on medium-high or 375°.

In a large bowl, mix okra, onion, pepper, seasonings, water and egg.

Combine flour, baking powder and cornmeal together; then stir both mixtures together.

Carefully use a large spoon and spoon a large tablespoon of okra batter into the hot oil, fry each side until golden brown, about 3 minutes per side.

Remove patty using a slotted spoon and allow to drain on paper towels.
