INGREDIENTS:

200g rice

2 tbsp extra virgin olive oil

1 onion

1 tsp turmeric

2 cloves of garlic

1 jalapeno pepper

1 tsp salt

1 tsp black pepper

1 tsp paprika

1 cup tomato paste (or tomato sauce for a smoother consistency)

1 cup chicken broth

2 tbsp Mexican Seasoning Blend

Mexican Seasoning Blend:

4 tablespoons New Mexico chile powder

2 tablespoons smoked paprika

2 tablespoons ground cumin

1 tablespoon garlic powder

1 tablespoon onion powder

1 tablespoon dried oregano leaves

2 teaspoons crushed red pepper flakes

1 teaspoon cayenne pepper
