INGREDIENTS:
1 Slab or half slab of Atlantic Salmon Skin on (cut into thick serving slices)
1/2 C Orange Juice (fresh not from concentrate)
1/3 C Lemon Juice (freshly squeezed)
3 T Unsalted Butter, melted
2 T Honey
1 T Salt & Pepper
1 T Canola Oil
1 T Butter
Herb blend:
1/4 teaspoon Basil, thyme, coriander, dried mustard seeds
1/3 teaspoon red pepper flakes, ground, dried garlic and *poppy seed (*optional)
DIRECTIONS:
Preheat oven to 400. In a pan add butter and oil over medium low heat.
Rinse and pat dry all sides of salmon. Season salmon with salt pepper and half of your herb blend.
In a bowl mix together honey, orange juice, lemon juice, melted butter and remaining Herb Blend seasonings. Set aside.
Raise heat to Medium. Place salmon skin side up in pan, 3 pieces at a time. Cook until slightly browned about 4-5 minutes. Flip over then pour honey blend sauce over while in pan. Braise and cook another 1 minute.
Place each piece of salmon on a baking sheet lined with parchment paper. Do not use foil. Baste with remaining juices.
Set in middle rack of oven, uncovered and cook until done about 10-15 minutes depending on size.
Remove and immediately serve while hot. Sprinkle with and herbs you like to taste.
