1 pound ground beef
Salt and pepper to taste
8 slices rye bread
8 slices Swiss or American cheese
1 large onion, thinly sliced
2 tablespoons butter, divided
2 tablespoons vegetable oil, divided
Divide the ground beef into 4 equal portions and shape them into patties. Season both sides with salt and pepper.
Heat 1 tablespoon of vegetable oil in a skillet over medium-high heat. Cook the patties for 3-4 minutes per side or until cooked to your desired level of doneness. Remove from the skillet and set aside.
In the same skillet, add the remaining tablespoon of vegetable oil and 1 tablespoon of butter. Sauté the thinly sliced onions over medium heat until caramelized and golden brown, about 10-15 minutes. Remove from the skillet and set aside.
Wipe the skillet clean and spread butter on one side of each slice of rye bread.
On the unbuttered side of 4 bread slices, place a slice of cheese, a beef patty, a portion of caramelized onions, and another slice of cheese. Top each with another slice of bread, buttered side facing out.
Heat the skillet over medium heat and cook the sandwiches for 3-4 minutes on each side or until golden brown and the cheese is melted.
