Box of tricolored pasta




16 oz box of tri-colored pasta spirals (You can use whatever pasta you like.)

¼ cup of chopped banana peppers (mild.) (Optional)

½ cup of pepperoni cut into wedges

½ cup of minced red onion

1-6 oz can of whole black olives (already pitted.) Slice by hand.

1-8 oz block of pepperjack cheese (cubed small.)

¼ cup of Zesty Italian Dressing

¾ cup of Greek vinaigrette




Cook pasta al dente, strain, and rinse with cold water. Add drained pasta to a large mixing bowl. Add peppers, pepperoni, onion, olives, and cheese. Mix well. In a separate bowl mix the 2 dressing together, then pour over pasta mixture. Stir in dressing until pasta is well coated. Transfer to an airtight bowl and refrigerate for several hours. Serve as a side dish.

Note: As soon as I got home from work, I added ½ cup more Greek dressing to the pasta salad. It was too dry. In the morning before bringing the salad to work, I added another ¼ cup of Greek dressing. The pasta absorbs a lot of the dressing. You can add dressing to taste depending on how you like it.
