Season chicken liberally to your taste and refrigerate for 1 to 2 hours up to overnight.
Preheat oven to 400°
Spread chopped vegetables on the bottom of the baking dish, place chicken on top then pour 1/3 c. broth in the bottom of the dish
Bake uncovered for a total of 45-50 minutes. At 20 minute intervals baste the chicken with drippings at the bottom of the pan.
