Apple Pie Tacos

INGREDIENTS:

4 Apples, peeled & sliced

½ Cup Sugar

2 tsp Cinnamon

½ tsp Nutmeg

½ Cup Water

Tortillas (flour) 6″ size

Oil for frying tortillas

1/2 Cup sugar-cinnamon mixture for dusting

Whipped cream for topping

 

 

DIRECTIONS:

1️ Apple Filling Preparation: In a saucepan, combine apples, sugar, cinnamon, nutmeg, and water. Stir well to mix. Cover and cook over medium heat, stirring often, for about 10 minutes or until the apples are semi-soft. If the sauce needs thickening, mix 1 Tbsp of cornstarch with 3-4 Tbsp of water and stir into the sauce until it thickens.

2️ Tortilla Frying: Heat oil in a skillet over medium heat. Fold a tortilla in half and briefly dip the bottom part in the oil, then fry each side until golden brown. Remove from oil and immediately dust with the sugar-cinnamon mixture.

3️ Assembly: Spoon the apple pie filling into the fried tortilla shells. Top each with a dollop of whipped cream and a sprinkle of the sugar-cinnamon mixture.
